Flanken short ribs cut thin and grilled Korean-style can be excellent or rubbery depending on the kitchen’s handling. The slow-roasted BBQ beef ribs can‘t be rushed on a holiday — if they started them Friday, they’ll be good.

Tin Lizard Bar & Grill at Cadence Crossing Casino is $24.99 for a 12oz New York steak, Baja shrimp, potato and vegetables, a strawberry ice cream sundae, and a 16oz draft beer. The steak isn‘t going to be dry-aged prime, but at that price point it doesn’t need to be.
